The Secret to Making a Great Curry with Family Secret

At Family Secret, we like to consider ourselves as connoisseurs of curry!

With this in mind, we know a thing or two about the ingredients and flavours that add an extra WOW factor to your dish.

Here are just a few of our tips to making the perfect curry:

Sizzle the spices – Don’t be afraid of playing around with the spices! Kick off your curry by heating up whole spices in hot oil to unleash their true flavours. Some of the most common spices in our healthy curry sauce are: cardamom, cinnamon, garlic cloves and coriander seeds.

Make healthy choices – There are a number of health benefits associated with curries. Spices like chilli and ginger are packed with antioxidants and vitamins to help fight viruses and boost your blood circulation.

Take your time – A good curry doesn’t have to take hours to cook. But it’s important to allow the ingredients to cook properly. To get the most out of your ingredients like onions, you should cook them first to release the flavour. Although a tip for you. Adding a pinch of salt helps them brown quicker. However, powerful spices like Garam Masala, can wait until last as the cooking process often reduces the flavour of dried spices.

Add seasoning – One of the biggest mistakes people make when cooking curries is not adding salt. This is often on the basis that there is so much flavour with the spices so salt is not needed. However, this is wrong. You should add a mixture of lemon juice and a pinch of salt to your curry in order to combine all the tastes in your mouth, tie everything together and ensure the flavors compliment each other.

Explore different garnishes – A good garnish could really make the difference between a good and a bad curry. While often overlooked, flaked coconut, toasted sesame seeds, poppy seeds, fried onions and fresh pomegranates are a good choice – and totally delicious!

5 Things Only Curry Lovers Will Truly Understand

Ah, curry; that delicious stew of spiciness that makes a mean treat at the end of a busy work week. For many, curry is the symbol of a good Friday night-in, but how many of you will go as far as to say you’re a ‘curry lover’?

After all, everyone enjoys a good ol’ curry from time to time, but only true curry lovers will relate to the following.

The ‘look’ you give someone when they order a Chicken Korma.

While some look at the mild and creamy Korma as a respectable curry option, you can expect the connoisseurs of curry to look down on them in shame. In the words of Smithy from Gavin and Stacey, “a Korma is pointless, it’s futile!”  but there’s always one who decides to order this mellow dish and as lover of curry, you’re horrified that someone you loved and trusted would pick something so simple! It’s safe to say it’s still a firm favourite with My Family Secret!

Having to listen to people tell you take away curries are better than homemade.

Perhaps you have a recipe dating back decades or there’s this one homemade low fat curry sauce that you really love – either way, you will have to deal with idiots telling you how much better their ‘local’ is compared to your recipe. We beg to differ, there is nothing better than homemade and they clear haven’t tried our sauces.

Watching someone who’s eating a curry much too hot for them and enjoying their suffering.

We have all seen it, haven’t we? The over confident orderer selecting their vindaloo. They seem so proud of their choice of curry, until it arrives and they realise after the third mouthful they’ve got to finish the dish!

Our family sauces are all carefully seasoned and flavoured for maximum impact but minimal heat so they can be enjoyed by all. For tips on how to cool down a hot curry, check out our blog!

Curry Breath

It was reported that curry was actually good for bad breath, suggesting the curry leaves have anti-fungal and anti-microbial properties. However, this is far from the truth. All of the hard-hitting spices in curries combine in your mouth to leaving your breath smelling far from fresh!

If you’re a fan of curry, why not try some of our low fat curry sauces? We have a range of vegan sauces that draw inspiration from around the world, bringing traditional recipes to our modern customers.

Why Our Sauces Are The Perfect Dieting Partner?

As they say ‘summer bodies are made in the winter!’ As we approach the colder months, weight loss and diet talk starts to fill the air. For those looking to shake up their diet, have you ever tried a diet filled with curries?

Now, we don’t mean pigging out at your local Indian every night of the week; indulging in creamy chicken kormas and stodgy sag aloo. Instead, we mean trying out traditional Asian recipes – keeping all the flavour but taking out the fatty elements.

Numerous people have reported losing several stone in weight after eating curries two meals a day. In particular, Suki Burai, a mother of three who lost three stone from creating traditional Indian curries.

In fact, curry could actually be better for you than just losing weight. Resea have looked at the spices in curries such as turmeric, cumin, allspice, cardamon and ginger

Taking inspiration from this, we’ve designed a range of low fat curry sauces that are perfect for healthy eating.

Low Fat Green Thai Curry Sauce

Regarded as the hotter of the Thai Curry triplets, our Green Thai curry sauce can be enjoyed with some diced chicken.. A thin yet flavoursome sauce, this Family Secret special contains a long list of healthy ingredients including:

  • Fresh green chillies
  • Lemon grass
  • Ginger
  • Garlic
  • Kefir lime leaves
  • Cilantro roots
  • Shrimp paste.

What makes this healthy curry sauce beneficial for those trying to lose weight is it’s lack of fatty, creamy ingredients. Instead, we use a small splash of coconut cream and water to give the sauce some consistency and flavour.

Low Calorie Moroccan Tagine Sauce

Originating from North Africa, our Moroccan Tagine sauce draws from traditional cooking methods in Africa, in particular the technique of slow-cooking savoury stems. Using a crockery pot called a Tagine, the Moroccans would mix together sliced meat, poultry or fish with seasonal vegetables and fruits to create a stew. Then, they add spices, nuts and dried fruit for extra flavour. In later years, the Moroccan Tagine recipe was named after the pot it is cooked in.

Our take on the classic Moroccan Tagine sauce is made using fresh vegetables and spices such as tomatoes, onions, aubergines and paprika – making it low in calories (just 48kcal per 100g).

Healthy Indonesian Rendang Curry Sauce

Our most popular sauces is our Family Secret’s Indonesian Rendang Sauce. In 2017, it picked up a Great Taste Award.

The Rendang dish was traditionally served at ceremonial occasions and to honour guests, but is most commonly served across Malaysia in the Malay community. We draw inspiration from classic Indonesian recipes, using traditional ingredients such as coconut milk, red chinese chillies, turmeric and milled lemongrass. While coconut milk is high in fats, coconut milk actually contains a ‘healthy kind of saturated fat’ that is not harmful to the body. This is what makes our Rendang sauce so healthy!

Low calorie rogan josh curry

National Potato Day: Sweet Potato Rogan Josh Curry

National Potato Day is on the 19th August! Family Secret are celebrating the day dedicated to spuds with a brand new potato curry recipe using our healthy curry sauce, Rogan Josh.

This cheap and easy dish is the perfect vegetarian solution for an after-work meal.

For our Family Secret ‘Low Fat Rogan Josh Curry with Sweet Potato’ recipes, you will need:

  • Olive Oil
  • 2 Red Onions
  • 3 Medium-Sized Sweet Potatoes
  • 1 x 400g tin chickpeas
  • 400g spinach
  • Family Secret Rogan Josh Curry Sauce
  1. Heat up 2 tablespoons of olive oil into a large sauce pan on a medium heat.
  2. While your oil is cooking, peel and finely slice your onions before adding them into the pan. As you cook the onions for 10 minutes, stir them occasionally until they are soft and golden.
  3. Once your onions have softened, add Family Secret’s Rogan Josh sauce into the pan and mix well. At a medium spice, this sauce takes inspiration from Kashmiri cuisine where the Rogan Josh dishes are considered a ‘staple’. It is one of healthier sauces in our range being low in fat and sugar – perfect for anyone looking to lose weight while enjoying flavoursome meals.
  4. Chop your sweet potatoes into 2cm chunks and add into the pan with the softened onions. If you want to add extra spice, we recommend chopping up one fresh red chilli and add into your pan of vegetables.
  5. While you stir together your cooked ingredients, drain and tip your tin of chickpeas, then cook together for 5 minutes.
  6. If you have a particularly big family to serve, roughly chop up and add your fresh tomatoes (if using) or tip in tinned tomatoes and add 200ml of water. This should thicken up the sauce to serve more people.
  7. Now that you have added all your core ingredients, reduce the heat of your pan to a simmer and cover. Then cook for at least 15 minutes.
  8. After 15 minutes, remove the lid and cook for a further 15 to 20 minutes. However, this time we recommend stirring every once in a while to ensure the sweet potato is cooked through and sauce has thickened.
  9. In your last minutes of cooking, be sure to add the spinach and cook until wilted. Then serve your dish with Papadums and rice.
